This is my all time favorite and real easy to prepare. I often bring this recipe to potlucks and have even used it as a cake for birthdays, because it sets so well. Most importantly, the dry and wet ingredients are mixed in the same bowl, just that the wet ones are mixed last.
Ingredients
1 ½ cup | Gluten free Oatmeal |
1 cup | Chocolate chips |
1 cup | Almond flour or coconut flour |
½ cup | Walnut chopped |
½ cup | Raisins |
1 tsp | Xanthan Gum |
½ cup | Agave nectar |
3 tbsp | Flax seed with warm 6 tbsp hot water |
6 tbsp | Grape seed oil |
Preparation
1. Take a large bowl and mix oatmeal, chocolate chips, xanthan gum, almond flour, if not using coconut flour, you can add one spoonful of coconut flour. If using coconut flour, almond flour is not needed.
2. You can use vegan chocolate chips or any other kind. In this dish, I used the Hershey’s dark and mint chocolate which was very refreshing.
3. Add walnuts and raisins into the mixture.
4. The last step involves adding the wet ingredients directly to the mixture. Always start with the oil, and then add agave nectar.
5.In a separate bowl mix, flax meal with hot water to create a guey mixture that has egg like consistency. Add this flax meal mixture to the bowl; mix thoroughly with a wooden spoon.
6. Transfer the mixture to an 8 in square or round baking dish after brushing some oil in it. The wider the dish, the thinner will the bars you can cut out of the baked granola.
7.Bake the granola at 350 deg F for 25 minutes. You will see the chocolate has melted and the granola is darker brown and golden in color.
Cool Facts
Flax seed is an excellent substitute for eggs. Substitute one tablespoon of flax meal mixed in 2 tbsp of warm water for every egg. Flax seed is an excellent source of the essential fatty acids, omegas.
